Bettys Bubbling Broth

 
With Halloween fast approaching it's time to say hello to some warm and wholesome comfort food.
 
Why not try some pumpkin soup, this is after all the season for great pumpkins and lots of them...
 
After carving your pumpkin, don't waste any of it - here is a great little recipe for pumpkin soup which is easy and very satisfying.
 
INGREDIENTS
 
2lb/1kg pumpkin chopped into large chunks
2 medium onions sliced
2/3 cloves of garlic
3 cups/750 mls milk
Salt and pepper to taste
 
INSTRUCTIONS
 
1.  Place all ingredients in a saucepan and bring to the boil. Reduce heat and simmer until pumpkin is tender.
2.  Remove from heat and blend with a stick blender until smooth.  If you do not have a stick blender you can use a blender but allow to cool before processing in a blender.
3.  Season to taste with salt and pepper or add some chili ???? flakes to give a spicy taste to your soup.
4.  For a richer soup replace the milk with cream and add after you have blended the soup.
 
Serve in an enamel soup dish with some crusty sourdough bread and a dollop of cream for great visual effect and to wow your friends..
