Jams are probably the easiest foods to make.  It's not until you try that you will see just how simple it actually is.  You simply need fruit and some sugar with a little extras and there you go.  We here in Wexford are spoiled for choice for some of the best strawberries in the world, sure where ever you go you will see 'Wexford Strawberries' for sale along the roadside.  So here is the simple recipe to get to started..

Cut in half 1 kilo of strawberries and place in a stainless steel pot or maslin pan.

Add the juice of a lemon.

Add 1 kilo of jam sugar and stir.

Simmer on a low heat for a while and then boil for a few minutes.

Try the setting test by placing a spoon of the jam on a plate and leaving it in the fridge for a about 10 minutes or until cooled down  When you take it out try to push it to one side.  If it stays together and forms wrinkles it is time to pot it up.  Leave the jam to settle in the saucepan for a while.  This will allow the strawberries to settle evenly throughout jars and prevent them lying on top of the jam.

Simply pot up your jam into some of our large range of Kilner Jars, making great presents too.

Use your jam abundantly on toast and when you make your Victoria Sponge.  But that's for another day...

Enjoy...
